Winter Rainbow Soup
I love slow cooker recipes! This one is full of veggies and some unique ingredients. Omit the Parmesan for a Vegan recipe.
- 1/2 tsp dried rosemary
- 1 small yellow onion, diced (about 1 cup)
- 1/4 head purple cabbage, thinly sliced, then cut the slices in 1/2 ( about 2 cups)
- 1 tsp minced garlic ( about 2 cloves)
- 1 sweet potato, peeled and diced
- 1 cup frozed shelled edamame, thawed
- 2 1/2 cups Reduced-sodium vegetable broth
- 1 1/2 cups Water
- 1-3 tsp apple cider vineger
- 1/4 cup grated Parmesan
Instructions
Combine all of the ingredients except vinegar and Parmesan cheese in slow cooker.
Cook on low for 8 to 10 hours or on high for 4-5 hours. Stir in the vinegar and serve topped with the cheese
